I'm interested in locating some fiction with exploration or dealing with Ceres, Vesta or any of the kuiper belt objects/dwarf planets/etc... Any suggestions would be appreciated.

Greg Bear has a trilogy called The Way (Eon, Eternity, Legacy) with an accompanying short story (The Way of All Ghosts, found in Far Horizons) that starts out with a newly-discovered asteroid nearly identical to Juno that comes racing in towards Earth (no crash, the asteroid is captured and parked in a stable orbit around Earth.)

Have Space Suit—Will Travel by Robert Heinlein has stops on the Moon, Pluto, and Vega 5. I enjoyed it quite a bit, way back in high school.

Heart of the Comet by Gregory Benford and David Brin. This was one of the first science fiction pieces by Brin. Prior to being a SF writer, he was a planetary scientist. His doctoral dissertation on cometary evolution is highly regarded, I believe. The story is about a landing on Halley's Comet.
