the jets are composed of material from the BH's accretion disk of infalling matter that has been deflected by the BH's magnetic fields away from the BH, and up along the black holes spin axis.<br /><br />I.e. it's the lucky stuff that avoids falling in...and it's whatever the BH manages to "catch" as it drifts through space.
