Can the uncertainty principal in quantum physics apply on the macro scale to objects in the universe since their light takes so long to reach us (we never know the actual location AND state of the object due to lapsed time)? Could this tie together quantum physics and astrophysics?

No it is apples and oranges. The uncertanty principal is a physical law. Not knowing the location and movement of a celestial body is a perception or instrument problem.
