Why are we still not looking at the 5 closest stars to us with this telescope yet? Wouldn't focusing on our closest stars allow us to see exoplanets and future exploration targets that we would be reaching when we leave our system?

Here is the General Observer catalog for JWST for the current cycle, #1, in the field of exoplanets. There are currently 70 approved programs, including one that even has your concern in its title:
#1618 comprises 49 hours of observing "our closest stellar neighbors".
